We all adore eating muffins. What we don’t know is that they have antioxidant and anti-inflammatory properties. The main ingredient in the muffins is sweet potatoes. They are rich in beta-carotenes and they destroy free radicals in our bodies.
Sweet potatoes are also high in nutrients and it is confirmed that they prevent acute and chronic inflammation.
Recipe for muffins
Ingredients you will need:
- 3 eggs
- 1 sweet potato
- ¾ cup coconut oil
- 1 cup brown rice flour
- ¼ cup coconut flour
- ½ teaspoon pink Himalayan salt
- 1 tablespoon cinnamon
- ½ cup maple syrup
- 1/8 teaspoon of ground cloves
- 2 tablespoons of organic olive oil
- 1 teaspoon of ground ginger
- 1 tablespoon baking powder
- 1/8 teaspoon of ground nutmeg
Preheat the oven to 400 degrees and oil the muffin tray. After that poke holes in the sweet potato and put on the middle rack. Cook them for 1 hour and then leave it to cool.
Add the almond milk, maple syrup and olive oil to the sweet potato. Mix them well. Put the rest ingredients in the bowl and mix them too. Finally combine this two mixtures and stir them till you get a homogenous mixture. Pour it into muffin tins and cook them.
The muffins are ready.
